If you want to define phishing, it basically is where a criminal asks you for your sensitive data. They pose as a legitimate institution such as the Social Security Administration, your bank or your credit card company. When you turn over your information to them, they then use it to operate scams. You could end up owing several thousand dollars if the criminal has racked up charges against you.
The first documented case of phishing came in the mid 1990s when phishers tried to use fake credit cards to get access to AOL accounts. When AOL cracked down on this, the phishers switched to asking existing users for their login information.
This led to the idea that they could get actual financial data from people. 2001 was a watershed year for phishing. First there was the EGold Scandal in June and then after the horrific 9/11 attacks, some people took advantage of the tragedy to do "9/11 checks" on people which involved them revealing their sensitive information.
By 2004, phishing was a fully developed part of the criminal world.
These days, you are likely to get an email supposedly from your bank or credit card company which says they need information from you.
If you reply by email, the criminal will have access to your accounts.Legitimate communication with your banking institutions will always be done through their secure servers. Never send your information by email. You should always log into your account at the bank itself.
The crime is only going to get more sophisticated so you must remain ever vigilant. To define phishing in the future, you will have to change these details.
That's why I recommend that you get an identity protection service which will keep you safe no mater how sophisticated the criminals become.

Hmm. Cut out something in the paper, or something about Obama. That's a big piece of history. Try to make it something about how bad the economy is, and his plans to make it better. Then Laminate it. A credit card is a good Idea. Hmm. This is a hard one. There are so many things to explain the society, yet so little things that would explain themselves on what they are used for. Maybe something about fashion, so they can compare the way they dress, to the way we dress now. I might edit as I think of things.

I would suggest: a Cell Phone (with internet / music downloads) - it has totally taken over society, and in many households, replaced landlines all together (major cultural shift). a Credit Card - totally agree with you, plus it illustrates the ease with which we are willing to go into debt. a Book about the effects of 911 / terrorism - it has become all consuming for the begining of this century, and does not look like it will be going away any time soon.
